Your new cast iron pot needs to be cured before it is used for the first time
Step 1: prepare a piece of raw fat pork. (it needs to be fat to get more oil.)
Step 2: wash the pot thoroughly with flowing warm water. Dry the water (especially the bottom of the pot), place the pot on the stove and dry it over low heat.
Step 3: put the raw fat pork into the pot and press it with chopsticks or clamps. Apply the spilled grease evenly to every corner of the pot.
Step 4: with continuous wiping, the more lard spilled from the pot, the smaller and darker the pigskin. (The black one is just the carbonized vegetable oil layer that falling off from it. So it is not necessary to worry about it. It’s not a big matter.)
Step 5: remove the whole pot from the stove and pour out the lard. Clean the pot with kitchen paper and warm water. And then put the pot on the stove, and repeat steps 2, 3 and 4.
Step 6: after the surface of raw pork is hard, remove the “hard surface” with a knife and continue to wipe it in the pot. Do this until the raw pork is no longer black. (about 3-4 times.)
Step 7: rinse the cast iron pot with warm water and dry the water. (the hot pot should not be washed with cold water, but can be washed with cold water after cooling.)
Step 8: put the pot on the stove, dry it over a low fire, apply a thin layer of vegetable oil with kitchen paper or toilet paper, and then boil it for curing!
